It’s been many months since I’ve eaten dairy products and even longer since I’ve eaten eaten eggs!  I thought it was not likely I could give up my favorite cheeses (romano and feta) but I did!

After learning about pink slime as the major ingredient in fast food chicken products it was pretty easy to give up eggs forever but not so easy to give up my favorite cheeses.  I haven’t tried any vegan cheeses yet but sooner or later I will try some.  I would like to taste some before I buy but haven’t found a market that gives out free tastes of vegan cheese.  Hoping my readers will clue me in on the brands to buy and what they are good for.

We appear to be on the same journey re: vegan diet! Except for some seafood, I’ve also stopped using meat, eggs, and dairy. Admit that vegan cheese can be disappointing but am working toward getting away from substitutes anyway. Very hard to find fake cheese that’s also non GMO let alone organic, so it’s still questionable as far as nutrition. “Nutritional yeast” flakes kinda add a tangy cheese like flavor to other foods and I don’t consider that a substitute, as it has it’s own merits, not just a stand in. The food industry’s cruelty and filth and all the tainted food outbreaks convinced me it was time to just stop supporting this industry.

I recently got my local grocer to buy a case of Daiya mozarella…I tried it and yes, it melted great, taste was lacking so the next time I used it, I put some in a burrito with roasted pasilla peppers, tomatoes, black beans, cilantro, green chilli salsa and green onion. So what I’m saying it’s okay as long as you spice it up.

Recently read a blog that suggested using smoked paprika and nutritional yeast on soft tofu to make it taste more like egg, Problem is, I haven’t found any smoked paprika …maybe Trader Joe’s has it?

Can’t remember where I’ve seen smoked paprika but almost certainly a specialty store. Spices are one thing I try to always buy organic now, too, after reading of the things that can be in them you’d never dream of. Daiya’s ok, also Trader Joe’s soy cheese shreds, but I agree, they need spicing up! I made vegan lasagne with TJ’s soy cheese, and probably whole food’s fake meat balls, and a jarred sauce. It was delicious, you really couldn’t tell it was vegan. So spices really do help, a lot.
